Harty Oysters, trading as Dungarvan Shellfish Ltd, was founded in 1985 in Dungarvan Bay, Co. Waterford, Ireland. Our oysters were the first to be laid in Dungarvan or even County Waterford. After doing some research, we soon came to the conclusion that it could be possible to grow really good quality oysters in the Bay -  the equivalent of the 'speciale' standard recognised throughout France. 

After starting off on a very small scale, we have grown to over 90 hectares of licensed marine foreshore and over the last 25 years we've become one of the biggest and most successful oyster farms in Ireland. Harty Oysters is owned and managed by the Harty Family and has now passed on to the 2nd generation of the family.
